You need to eat



This is the best thing you haven't made yet! Something magical happens when you mix pork with sweet and spicy liquid and slow cook for hours and hours. Pure heaven! And you have a slow cooker, well all the better! Makes this so easy and seems like a ton effort went in. One bit of advice, don't try to save on calories and attempt this with diet cola. It will not work, especially when reducing the stock at the end for the BBQ sauce, you need sugar!

Here's what you'll need

  • 2 pound boneless pork shoulder
  • 1 medium onion (roughly chopped)
  • 2 medium carrots (roughly chopped)
  • 3 stalks of celery (roughly chopped)
  • 3 jalapenos (sliced)
  • 1 head of garlic (roughly chopped)
  • 2 litre bottle of cola (NOT diet)
  • 1 cups chicken stock
  • 2 tbsp mustard powder
  • 1 tbsp dried or fresh thyme
  • 1 tbsp ground cumin
  • ½ cup smoky BBQ sauce
  • salt and pepper
  1. in your slow cooker (or deep oven-proof pot with lid) whisk together half the cola, chicken stock, cumin, mustard powder and thyme, then toss in all the chopped vegetables

  2. season the pork well on all sides with salt and pepper

  3. add the pork and add more cola if you need to until it's fully covered

  4. cook on high for 8 to 10 hours (or if cooking in the oven, cover well and cook in a preheated 325° oven for 4 hours)

  5. when it's ready, remove the pork, shred with a couple of forks and toss into a warmed bowl with a laddle or two of cooking liquid to keep it moist, cover with plastic wrap and set aside


  7. in the meantime, strain the rest of the cooking liquid into a pot, add the rest of the cola and BBQ sauce and simmer until reduced to a nice thick sauce (about ½ hour or so)

  8. when you're ready, toss the pork into a frying pan and simmer a few minutes to reheat and spoon in a bit of the BBQ sauce

  9. that's it, serve up on a bun, in a wrap or any way you like your pulled pork with a generous drizzle of the sweet cola BBQ sauce!
