Beer lovers are not hard to please in general. These people love nothing more than a cold beer on a hot day. Who wouldn't get along with someone like that? If you want to impress this generally easy-going breed, you should start by cooking everything in their favorite libation....BEER! This chilli is sure to please.

Here's what you'll need

GREEN CHILLI
  • 1 pound pork shoulder (cubed)
  • 4 celery stalks (finely chopped)
  • 1 largee onion (finely chopped)
  • 2 green bell peppers (finely chopped)
  • 550g can of white kidney beans (or any other white beans)
  • 1 whole head garlic (finely minced)
  • 2 jalapeno peppers(finely chopped)
  • 2 poblano peppers (finely chopped)
  • 16ooz can of cider
  • 3 tbsp vegetable oil
  • 2 limes (juice and zest)
  • 3 cups chicken stock
  • 2 tbsp whole cumin
  • 2 tbsp whole coriander
  • 2 tbsp whole mustard seeds
  • 2 tbsp flour
  • ¼ cup fresh cilantro
  • ¼ cup fresh parsley
  • ¼ cup fresh oregano
  • ½ cup sour cream
  • 200g bag tortilla chips (unsalted would be best)
  • salt and pepper
  1. season, flour and brown cubed pork

  2. add diced onions, garlic, celery and peppers

  3. toast whole spices (cumin, coriander, and caraway) and grind in a pestle and mortar and add to the pot

  4. add chicken stock and cider

  5. simmer for 2 ~ 3 hours or until meat just falls apart and vegetables have all but disappeared

  6. in the last 10 minutes, add white kidner beans, finely minced cilantro, parsley and oregano

  7. ladle into a deep bowl

  8. add a dollop of sour cream and break up tortilla chips on top for some extra crunch
