HAM HOCK CAKES WITH CHEESY AIOLI

These tasty and crisp little patties are the perfect vessel for ham hock. A cheap bit of pork, slow cooked for hours and it comes out perfectly delicious and tender. Mix it with potatoes, peas and mustard, batter and fry it up crisp, and you have a perfect combination. I suggest making the aioli way ahead to really let the flavours meld together.

Here's what you'll need

  • 1 whole smoked ham hock
  • 2 carrots (large chunks)
  • 2 celery stocks (large chunks)
  • 1 large onion (large chunks)
  • 1 head of garlic (large chunks)
  • 2 large baking potatoes
  • ½ cup frozen peas
  • 2 tbsp mustard
  • 2 eggs (beaten with a splash of milk)
  • 1 cup flour
  • 2 cups crushed corn flakes
  • 1 bag greens (lightly dressed)
  • 2 tbsp butter
  • 2 tbsp olive oil
  • salt and pepper to taste

...the Aioli

  • 1 cup mayo
  • 1 head garlic (roasted)
  • ¼ cup grated cheddar (the best you can find, and avoid the coloured yellow stuff)
  • 1 tbsp grainy mustard
  • ½ cup thick yogurt
  • 3 anchovy fillets
  • 1 tsp celery salt
  • 1 tbsp cider vinegar
  • 1 tsp sugar
  • 1 lemon (juice and zest)
  • 2 tbsp freshly chopped parsley
  • salt and pepper to taste
  1. rinse ham hock under cold water and pop into a deep pot, toss in the garlic, carrots, onions and celery and fill with cold water (enough to cover)

  2. bring to a boil, reduce heat to low and simmer for 2½ to 3 hours

  3. when done, take off the heat, allow to cool slightly (at least 30 to 45 minutes in the liquid)

  4. scoop out the ham and shred with a fork, set aside to cool

  5. in the meantime, prick the baking potatoes with a fork, lay onto a baking sheet lined with foil and sprinkle with salt

  7. pop the pan in a preheated 350° oven for an hour or until cooked all the way through

  8. when they're done, let them cool long enough that you can handle them, and carefully peel them

  9. mash them with a fork, add the peas, mustard and the shredded ham and stir to combine

  11. divide the mixture into 9 balls of equal size, roll in your hand, then flatten with your palm and smooth out the edges

  13. next, set up a dredging station and gently coat the patties in flour, then egg, then in the corn flakes and set aside (best to pop them back in the fridge for an hour or so to let them set up)

  15. carefully fry the patties up in butter and olive oil a few at a time (don't overcrowd the pan) until golden brown and crisp

  17. keep them warm in the oven until ready to serve

  18. now for the aioli...wrap the whole head of garlic in foil and pop into a preheated 350° oven for an hour and allow to cool completely

  19. pop into a food processor with all the ingredients and pulse until smooth (stir in the parsley) and season as you like

  20. dress some greens and top with the ham hock patty and the aioli
