MUSHROOM GRATIN CRUSTED PORK CHOPS

As a newcomer to the Ketogenic Diet, I came up with little number that was amazing! Garlicky mushrooms and blue cheese are a perfect topping for lovely pork chops (boneless) and pork rinds give you a nice crunchy texture that you can miss on this diet.

Here's what you'll need

  • 4 boneless pork chops
  • 250 grams mushrooms (sliced)
  • 1 small onion (finely chopped)
  • 4 cloves garlic (finely minced)
  • 250 grams blue cheese
  • 1 tbsp brandy
  • 2 small bags pork rinds (roughly chopped)
  • salt and pepper to taste

  1. in a frying pan, sautee the mushrooms in butter until browned and soft, about 8 minutes

  2. add the brandy and flambee to burn off the alcohol and cook until all the liquid is gone
  3. put the mushrooms in a bowl and set aside
  4. next, in the same pan, toss in the onions and cook until fragrant and translucent, about 5 minutes and add the garlic

  5. toss them into the bowl with the mushrooms and set aside to cool

  6. in the same pan, add a bit more butter if needed, season the pork chops well on both sides and sear on each side for 3 or 4 minutes depending how thick they are

  7. pop them onto a baking tray

  8. now, back to the bowl, add the blue cheese and give it all a good mix

  10. heap spoonfuls of the mushroom mixture generously onto each of the pork chops and sprinkle on the pork rinds

  11. toss the baking tray into a preheated 425° oven for 5 minutes or until the cheese is caramelized and bubbly hot

  12. serve up right away with a simple salad and grilled asparagus if you like
