PORK STROGANOFF WITH TAGLIATELLE

Stroganoff is like a hug on a plate. Comforting, hearty and warm. Full flavours of mustard, white wine and rosemary are the perfect combination. Serve it up on some extra wide tagliatelle noodles to soak it all up...and don't forget a dollop of sour cream on top!

Here's what you'll need

  • 2 pound boneless pork shoulder (cubed)
  • 1 medium onion (finely chopped)
  • 3 tbsp butter
  • 3 tbsp olive oil
  • 3 tbsp flour
  • 2 cups chicken stock
  • 2 cups white wine
  • 2 tbsp mustard
  • 1 tbsp dried or fresh rosemary
  • pasta dough
  • 220g package button mushrooms
  • ¼ cup heavy cream
  • 3 tbsp fresh parsley
  • ¼ cup sour cream
  • salt and pepper
  1. season and dredge the pork in some flour and brown off in a good nub of butter and olive oil in a deep pot

  2. remove and set aside

  3. toss the onions into the pot and sautee until translucent and lighty browned

  4. add flour (and more butter and oil if needed)

  5. mix well and heat at least 5 minutes

  6. toss the pork back in and add white wine and chicken stock

  7. add mustard and rosemary

  8. season well and simmer about 1 ~ 2 hours or until the pork falls apart (adding water if needed)

  9. take off the heat and stir in cream

  10. in a sautee pan, brown the button mushrooms and toss them in the stroganoff

  12. roll out the pasta sheets and cut them into wide strands, toss them in some salted, boiling water

  14. scoop the noodles out and toss them in the sauce

  15. toss onto a warmed plate and top with a dollop of sour cream
