Bacon Wrapped, White Pudding Stuffed Pork Tenderloin

This is triple pork action! What else is there to be said? I came across white pudding which is absolutely delicious, and one traditional way to use it (in Scotland) is to stuff it into chicken and wrap in bacon, but I got a really nice pork tenderloin and thought it would work...and it really did! So if you've never tried white pudding before, this may be a good way to give it a go!

Here's what you'll need

  • 2 pork tenderloin
  • 6 slices bacon (streaky & thick cut)
  • 1 cup white pudding
  • 1 tbsp flour
  • ¼ cup cream
  • ¼ cup white wine
  • 3-4 sprigs fresh thyme (or 1 tsp dried)
  • salt and pepper
  1. butterfly the tenderloin, season well inside and break white pudding along the centre

  3. lay bacon onto a sheet of cling film

  5. lay tenderloin (seam side down in the centre)

  7. pull up one side of the cling film, then roll up to wrap the pork with the bacon and you canpop into the fridge for a few hours or even a day or two

  9. when you're ready, preheat the oven to 350° and toss the pork (seasoned with a bit of black pepper) onto an oven-proof dish and bake for 35-45 minutes or until bacon is crisp and pork is cooked through

  11. when it's cooked, carefully place it onto a warmed plate and loosely cover with foil and let rest while you make the sauce

  12. in the pan that you cooked the pork in, sprinkle in the flour and cook a few minutes on medium heat on the stovetop

  13. pour in the white wine and gently simmer until most of the liquid reduced by half and slightly thickened

  14. stir in the mustard, cream and thyme and simmer another few minutes

  15. cut the pork into nice thick slices and serve up with sauce
