POTATO ROSTI

Looking for a new way to make potatoes? These are easy to make and I like to put whatever I make with them (steak, chicken or even fish) right on top and drizzle on a sauce...really elegant. This recipe will make 3 of them, so you can adjust the recipe for however many you want to make and they're really not hard to make at all and you can add all sorts of things (onions, carrots, cheese...)

Here's what you'll need

  • 3 medium sized potatoes
  • 1 egg yolk
  • 2 tbsp dried parsley
  • 2 tbsp flour
  • salt and pepper to taste
  1. peel the potoatoes and grate them with a cheese grater onto a clean and dry kitchen towel

  3. pull the corners of the towel up and wring the grated potatoes over the sink until there is no liquid left

  4. toss them into a bowl with the rest of the ingredients and mix well

  6. scoop out ⅓ of the mixture at a time and place onto a heated pan with olove oil and smoosh them down a bit

  7. POTATO ROSTI
  8. sautee them over medium heat for about 5 minutes on each side

  9. place them on an oven tray and bake in a °350 degree oven for another 8 minutes or so

  10. serve them up or keep warm in the oven
