ROASTED TURMERIC & PAPRIKA POTATOES WITH SEEDS
Always on the lookout for new potato dishes, I was having a mental block one evening when I was making salmon and had a craving for curry. I came up with these potatoes as an accompaniment to the curry sauce without clashing or overpowering it, with subtle flavour and bright vibrant colours. It really works and the seeds, when roasted all together add a really nice crunchy contrast to the soft potatoes. These would work with any big flavoured sauces or meats you make.
Here's what you'll need
- 4 medium potatoes (boiled and cubed)
- 2 tbsp ground turmeric
- 2 tbsp ground paprika
- ½ cup mixed seeds
- 2 tbsp olive oil
- 2 tbsp butter
- 1 lemon (juice and zest)
- salt and pepper
- in a bowl, toss the potatoes with all the ingredients and transfer onto a baking sheet and toss into a preheated 350° oven for about 20 minutes (depending how big you cut the potatoes up) or until caramelized and crisped at the edges
- that's it...garnish with cilantro if you like and serve up!
