Warm Potato Salad


I love a warm potato salad. Never heard of it before? Imagine it as bringing new flavours to the simple boiled potato. I promise you, it is absolutely delicious and insanely easy! The perfect side dish on a rainy summer day when you're stuck inside and you can't grill.

Here's what you'll need

Warm Potato Salad
  • 4 baking potatoes
  • ½ cup fresh or frozen peas
  • 2 cloves roasted garlic (mashed into a paste)
  • 1 shallot (finely chopped)
  • ¼ cup cilantro and parsley mixed (finely chopped)
  • 1 tbsp celery seed
  • 2 tbsp red wine vinegar
  • 4 tbsp olive oil
  • 1 lemon (juice and zest)
  • salt and pepper
  1. boil your potatoes until cooked

  2. toss in frozen or fresh peas for the last 5 minutes

  3. finely mince all the dressing ingredients and mix with the oil & vinegar

  4. season well and you're done

  5. strain your potatoes and toss with the dressing right away

  6. that's it...serve it up!

I like to use a waxy potato for this because it'll keep it's shape. Chop them up as big or small as you like. Try not to over cook the peas, you want them to be a little crunchy.

This salad is really easy. You can use any dressing you like. I prefer a vinegar based, because the dressing gets sucked up by the potatoes almost immediately. Warm potatoes salads are really just a way of giving boiled spuds new life.
