We all need to eat more salad. Why does it have to be a chore? Salads can be tasty and interesting. The main thing to keep in mind when you're making a salad is simple contrasts. Contrasting texture, flavours and colours will make for an impressive salad that anyone will be happy to tuck into.

CLASSIC CHEF'S SALAD WITH CHEDDAR GARLIC DRESSING
For many of you, this salad is nothing new and you've likely had it many times over the years. I recently rediscovered it a while back when I was dabbling with a Ketogenic Diet and I fell in love with it all over again. Lovely textures, fresh vegetables and the dressing is amazing!
GREEK LEMON ROASTED POTATO SALAD WITH ZA'ATAR TOASTED PITA CHIPS
I am completely obsessed with lemon and dill lately, and I absolutely LOVE lemon potatoes you get in Greek restaurants. So I came up with this little number and it works really well. Boil the potatoes with lemons really gives them a nice tart punch without overpowering them, roasting them gave them a nice texture and I used yogurt dressing, so a bit healthy right? Oh, and the pita chips are like tasty croutons!
CAPRESE SALAD WITH CRISPY PROSCUITTO
I'm not one to say that spending top dollar for something that is readily available anywhere with no obvious superiority of quality, but if you find good quality heirloom tomatoes, buy them! Don't cook with them! You need to eat them as is, with the most simple of ingredients. Good quality needs good quality...if not at least once in a while.
KOFTA POTATO SALAD WITH HALLOOMI CROUTONS, TZATZIKI AND FLATBREAD
Whenever you make a salad, you should always consider texture, flavour and colour. I really like everything that is going on with this salad, especially the warm and cold temperatures of all the ingredients. Nothing is the star, but all are getting along perfectly.
Coleslaw is something we've all had and is a staple for any barbecue or picnic. This recipe has celery salt and I would suggest not skipping this ingredient as I think it makes it. Make it the night before and it'll be even better!
HONEY MUSTARD CHICKEN AND BEETS SALAD
This salad is sure to be satisfying and filling...even for those big eaters who may be doubtful. The chicken is sticky sweet and slightly spicy from the mustard. Contrasted and complimented with candied walnuts, briny capers, beets, dressed greens and a horseradish creme fraiche. A nice blend of flavours when you manage to get all the ingredients in one bite!
BREADED CATFISH WITH TOMATO & CAPER GREENS
We all know we need to eat our veggies and fish. This salad is so simple, but it packs a flavourful punch, so that eating right is a bit easier...which is something we could all use. The textures and contrasting tastes. You get salty, sweet, savoury, crunchy and soft. Everyone will enjoy this yummy salad!
