Classic Chef's Salad with Cheddar Garlic Dressing


For many of you, this salad is nothing new and you've likely had it many times over the years. I recently rediscovered it a while back when I was dabbling with a Ketogenic Diet and I fell in love with it all over again. Lovely textures, fresh vegetables and the dressing is amazing!

Here's what you'll need:

  • 6 slices cooked ham
  • 1 chicken breast (seasoned, baked and cooled)
  • 2 eggs (hard boiled)
  • 200 grams good cheddar (cubed...use the best you can find)
  • 1 head salad leaves of your choice
  • 6 slices bacon lardons (fried and cooled)
  • 1 small cucumber (diced)
  • 3 or 4 pickled hot peppers (chopped)
  • 2 sprigs of green onions (chopped)
  • 1 tsp mustard
  • 1 whole head garlic (roasted)
  • 1 tbsp red wine vinegar
  • 1 cup mayo
  • 3 or 4 anchovy fillets
  • 1 small shallot
  • 1 good handful parsley (finely chopped)
  • salt and pepper to taste
  1. in a food processor, add the mustard, shallot, roasted garlic, half the cheddar and the vinegar and give a good blitz, then stir in the parsley

  2. season, taste and adjust as needed and pop into the fridge until you need it...and it only gets better with time!


  4. next, assemble the salad leaves and cucumber in a bowl and toss with as much or little of the dressing as you like and pour onto a plate or bowl

  5. top the salad with the, ham, chicken, cheese, bacon, green onion and peppers

  6. give it a good crank of fresh black pepper and serve up immediately
