KOFTA POTATO SALAD WITH HALLOOMI CROUTONS, TZATZIKI AND FLATBREAD

Whenever you make a salad, you should always consider texture, flavour and colour. I really like everything that is going on with this salad, especially the warm and cold temperatures of all the ingredients. Nothing is the star, but all are getting along perfectly.

Here's what you'll need:

  • 1 pound ground lamb
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp cinnamon
  • ½ tsp ground ginger
  • 1 small shallot (finely chopped)
  • 3 cloves garlic (finely minced)
  • ½ cup grated cucumber
  • 1 cup thick yogurt
  • 4 tbsp lemon juice and zest
  • 1 tsp garlic powder
  • 4 medium sized fingerling potatoes
  • 2 tbsp sumac
  • 1 tbsp oragano (chopped)
  • 1 package halloomi cheese
  • ¼ cup flour
  • 1 egg (whisked with a dash of water)
  • ½ bread crumbs
  • 2 bags of greens
  • 1 package naan
  • 4 tbsp pine nuts
  • salt and pepper to taste
  1. in a bowl, mix the meat and the next 6 ingredients, wrap up well and toss in the fridge (as long as possible...you could even make this the night before)

  2. next make the tzatziki by mixing the next 4 ingredients in a bowl, and again wrap and leave in the fridge as long as you can

  3. next, boil your potatoes whole until cooked all the way through and allow them to come to room temperature

  4. cut them hin half and toss with olive oil, sumac and oregano...set aside

  5. cut the halloomi into bite sized pieces and dredge in the flour, then egg, then bread crumbs and fry off in a deep fryer until gold and crisp

  7. form the meat into small logs, season well and sautee or grill if you like, just until cooked through (don't overcook them)

  8. brush the naans with olive oil and sprinkle with sesame seeds and warm in °350 oven for a few minutes

  9. toss the greens in some olive oil and lemon juice

  10. to plate, place the dressed greens on the plate, top with halloomi croutons, sprinkle on the pine nuts, add the bread, potatoes and koftas on the side with a dollop of tzatziki...dig in!
