GREEK LEMON ROASTED POTATO SALAD WITH ZA'ATAR TOASTED PITA CHIPS

I am completely obsessed with lemon and dill lately, and I absolutely LOVE lemon potatoes you get in Greek restaurants. So I came up with this little number and it works really well. Boil the potatoes with lemons really gives them a nice tart punch without overpowering them, roasting them gave them a nice texture and I used yogurt dressing, so a bit healthy right? Oh, and the pita chips are like tasty croutons!

Here's what you'll need:

  • 4 potatoes
  • 1 lemon
  • ½ cup corn (frozen or fresh)
  • 1 tbsp mint (chopped)
  • 1 tbsp dill (chopped)
  • 1 tbsp parsley (chopped)
  • 1 cup yogurt
  • 1 small shallot
  • 2 pitas
  • 2 tbsp olive oil
  • 2 tbsp za'atar
  • salt and pepper to taste
  1. cut the lemon up into thick slices and cube up the potatoes (bite sized pieces)

  3. toss into a pot with a generous amount of salt and simmer until potatoes are cooked through (about 20 minutes)

  5. drain and toss the potatoes in a bit of olive oil, season a bit with salt, pepper and dill and pop into a preheated 350° oven for 15 minutes or until golden and crisp

  7. allow the potatoes to cool completely and mix with the rest of the ingredients in a bowl, sprinkle with fresh mint and parsley

  8. brush the pitas with olive oil and sprinkle liberally with za'atar

  9. toast well in a preheated oven until toasty and crisp and break up

  11. mix half the chips into the potato salad and use the rest to sprinkle over the top
