ANCHOVY GARLIC "BUTTER"

This is a really tasty idea to give your garlic bread a new kick and no one will know what you've done! The anchovy will disappear into the olive oil and give a really nice, briny flavour that gives it that umami we all crave. I find that olive oil works better than butter in this case, so it's healthier too?

Here's what you'll need

  • ¼ cup chopped parsley
  • 6 cloves finely chopped garlic
  • ½ cup olive oil
  • 8 anchovy fillets
  • 1 lemon (juice and zest)
  • salt and pepper
  1. finely chop all the ingredients and mix well

  2. VOILA!

  3. smear it on sandwiches, put it on top of hummus and dip toasted pitas into it, serve with almost any meat...especially lamb
