SPANISH HUMMUS

Hummus is one of those things that is so simple to make and absolutely delicious! Originally a Middle Eastern dip, but is now well known almost anywhere. Grill up some flat bread and you are all set. I add lots of garlic and lemon juice to mine to give an extra kick, so be ready. This time I topped it with a lovely sausage and pepper mixture to give it an extra layer of yummy!

Here's what you'll need

  • 2 cups canned chickpeas (or fresh if you like, just remember to cook them well)
  • 5 cloves finely chopped garlic
  • ½ cup tahini paste
  • ¼ cup olive oil
  • 2 tsp ground cumin
  • juice and zest of 1 lemon (but maybe more)
  • 1 cup diced chorizo
  • 1 cup chopped red peppers (or add some green or yellow if you like)
  • 1 small tomato
  • 1 clove garlic
  • 2 tbsp chopped cilantro
  • salt & pepper to taste
  1. toss everything into a food processor

  2. you might need to add some of the tahini liquid or water if you need to make it a smooth puree

  3. taste and season more if needed

  4. sautee chorizo in a drizzle of olive oil until starting to brown and releasing that lovely red fat

  5. add peppers, garlic and onions

  6. chorizo and peppers
  7. add chopped tomato and simmer until most of the liquid is gone

  8. top the hummus with the sausage and pepper mix and drizzle on more olive and garnish with cilantro

  9. toast up some flatbread and dip
