CRUNCHY TUNA MELT BURGER

My husband LOVES tuna melts...for whatever reason, I'm not sure. One day, I came into the kitchen and he was hard at work making these. He literally used anything we had leftover in the fridge and cupboards, and was pretty excited for us to try them. So these babies are all him and I must admit that they were mighty tasty.

Here's what you'll need

  • 1 tin of tuna (drained)
  • ½ cup cooked macaroni (or any short cut pasta you have)
  • ¼ cup grated cheddar
  • ¼ cup corn
  • 1 jalapeno (chopped)
  • 1 small shallot
  • 3 cloves garlic
  • 1 cup milk
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups crushed Corn Flakes
  • 1 egg (whisked with a splash of water)
  • 4 buns
  • ½ head of iceberg lettuce (sliced thin)
  • salt & pepper to taste
Here's how:
  1. sautee the shallot, jalapenos and garlic in butter until translucent and cooked

  2. add the flour and cook another 4 or 5 minutes, stirring

  3. add the milk and keep stirring, cooking over medium high heat until thick (you want this to be much firmer than a sauce)

  4. take off the heat and stir in the cheese and allow to cool completely

  5. in a bowl, mix the corn, cream sauce, tuna and pasta...taste and season if needed

  6. form the mixture into patties

  8. dredge in flour, then egg, then corn flakes

  10. toss into a preheated deep fryer until crisp and golden

  11. meanwhile, toast the buns

  12. top the buns with the tuna burgers, lettuce, mayo and sriracha
