SMOKED MACKEREL BLUE CHEESE MAC 'N' CHEESE

I adore ooey gooey baked macaroni and cheese! Going through my grocery store's what I call the cheap bin, I found some smoked mackerel and knew I had to get, and the blue cheese compliments it so well. I really love to cook that way. I go to the cheap bin (food that is about to go over the sell-by date) and make something from whatever I find there. I find it really forces my hand and I love the challenge. Sometimes, there is nothing there and I have to shop from the rest of the store and I just can't make decisions, almost too spoile for choice.

Here's what you'll need

  • 1 whole smoked mackerel (skin and bones removed and gently flaked into large chunks)
  • 2 cups mussel meat (cooked)
  • 1 shallots (chopped finely)
  • 4 cloves garlic (finely minced)
  • ½ cup dry white wine
  • 2 cup milk
  • 3 tbsp butter
  • 3 tbsp flour
  • 1 cup blue cheese (crumbled)
  • 1 cup mushrooms (chopped finely)
  • ½ cup grated cheddar or mozza
  • 3 cup macaroni (or any short pasta you like)
  • salt & pepper to taste
Here's how:
  1. firstly, boil the macaroni in salted water until about 80% cooked

  3. in another pot, sautee onions and garlic in butter until translucent and fragrant

  4. add the mushrooms and cook another 3 or 4 minutes

  5. add the flour and cook about 5 minutes, stirring lots

  6. then add the white wine and simmer about 5 minutes to reduce a bit

  7. toss in the cream and simmer yet again until thickened slightly (about 5-8 minutes)

  8. remove the pot from the heat and add the blue cheese, mackerel, mussels and cooked macaroni and stir gently (you don't want to break up that lovely smoked fish too much)

  10. scoop out the pasta into oven proof dishes, top with shredded cheese and bake in a preheated °350 oven for about 5 minutes or until the top is bubbly and golden
