Seafood Squid Ink Pasta with Goat Cheese

SEAFOOD SQUID INK PASTA WITH GOAT CHEESE

Squid (or cuttlefish) ink (click here to order up your very own Squid Ink 90g) is one of my newest discoveries and I really love it. Just the dramatic colour is so dark that it's almost vibrant, stark and has a huge impact on the plate. Pink shrimp, white cheese and green chives are a feast for the eyes. Also, it lends a subtle briny seafood flavour that brings seafood and pasta together so beautifully.

Here's what you'll need:

  • 2 cups flour (all-purpose is fine)
  • 3 large eggs
  • 2 tbsp squid ink (click here to order up this Squid Ink 90g)
  • 2 chorizo sausages (diced)
  • 1 small onion or shallot (finely chopped)
  • 3 cloves garlic (finely chopped)
  • ¼ cup white wine
  • ½ cup goat cheese
  • 1 handful chives (finely chopped)
  • 12 cherry tomatoes (cut in half)
  • salt and pepper to taste
  1. dump the flour into a bowl, make a well in the centre, crack your eggs, add the squid ink and salt

  3. using a fork, start to slowly incorporate the flour picking up more and more from the sides as you go, and once a dough starts to form you can use your hands to finish it off and you're done!

  5. wrap it up and let it rest at least an hour in the fridge

  6. now the sauce, gently sautee the shallots and garlic over low heat in a good glug of olive oil until translucent

  7. toss in the chorizo and cook another couple minutes until rendered

  8. toss in the tomatoes and white wine and simmer about 10 minutes or until most of the liquid is gone

  9. now roll out the dough in your pasta machine (click here for step by step instructions) and cut into spaghetti

  11. toss the pasta into a pot of boiling salted water for 2 or 3 minutes

  12. at the same time, toss the shrimp into the sauce and simmer

  13. scoop the pasta out of the water and toss into the sauce and give it a good toss (if it's a bit dry, add a bit of the pasta water, this'll actually thicken it a bit as well)

  15. toss onto a warmed plate, crumble on the cheese and sprinkle the chives
