CIDER BRAISED CABBAGE & APPLES

CIDER BRAISED CABBAGE & APPLES

This is one of those things that people either hate or love. I happen to love it! A perfect balance between sour and sweet. Serve this alongside roasted pork, on a grilled sausage on a bun or even on a grilled cheese for a nice complimentary flavour.

Here's what you'll need

  • 1 whole cabbage (white or red, shredded)
  • 2 tbsp butter
  • 2 tbsp honey
  • 4 slices bacon (lardons)
  • 1 medium onion (finely sliced)
  • 2 cups chicken stock
  • 2 julienned apples (whatever you have, but they should be sweet, not tart)
  • 1 tbsp caraway seeds
  • ½ cup white wine vinegar
  • 160z dry cider (tall boy can)
  • ¼ cup sugar
  • salt and pepper to taste
  1. in a deep pot, sautee bacon until fat has rendered off but not too crisp

  2. toss in cabbage, apples and caraway seeds and sautee in half the butter until softened

  3. add white wine vinegar, cider and sugar

  4. season well and simmer gently on medium-low heat until cabbage is soft and liquid is mostly gone...about 40 minutes
