Watching all these cooking competitions on TV, I started seeing picled onions everywhere. I just had to give it a go! They are ridiculously easy to do and take no time or effort at all. Not to mention the punch of flavour they add to any dish and give much needed acidity to rich dishes.

Here's what you'll need

  • 4 medium onions (thinly sliced)
  • ½ cup white sugar
  • ½ cup white vinegar
  • 2 tbsp salt
  1. in a shallow pan, gently heat the vinegar and sugar until steaming but not boiling and sugar is completely disoloved

  2. toss the onions into a bowl and pour the liquid over, and stir in the salt

  3. JERK LAMB ROAST WITH FRIED PLANTAINS AND PICKLED ONIONS
