Classic Potato Salad


What says summer like a good old potato salad. It's rich and creamy, with lots of texture and fresh flavours. You can literally put anything you like in it. I would recommend you make this the day before you eat it. Potato salad loves time, all the ingredients will meld together over time.

Here's what you'll need

Classic Potato Salad
  • 1½ pounds potatoes (any kind will do)
  • ¼ cup fresh or frozen corn
  • ¼ cup radish (finely diced)
  • ¼ cup red pepper (finely diced)
  • ¼ cup edamame
  • 3 tbsp green onion (finely sliced)
  • 1 tbsp mustard
  • 1 cup mayo
  • ½ sour cream
  • 2 tbsp red wine vinegar
  • 1 lemon (juice and zest)
  • 1 tbsp celery seed
  • salt and pepper
  1. boil potatoes until cooked through

  2. add edamame and corn in the last 5 minutes

  3. drain and toss with a dash of vinegar, salt & pepper

  4. allow potatoes to cool completely (in the fridge preferably)

  5. in a bowl, whisk sour cream, mayo, mustard, celery seed, lemon juice (& zest), vinegar and season really well

  6. dice green onion, red pepper and radish and toss with corn and cooled potatoes

  7. mix in the dressing and you're done

These ingredients are just a guideline. You can add whatever you like, always thinking about texture and flavour. If you've never had edamame in your potato salad, I suggest you give it a's really good!
