You need to eat



Fennel is one of those vegetables that I have grown really fond of. I love the taste of them and they pair well with seafood, (especially shell fish), tomatoes, herbs of all kinds...a really versatile ingredient. Roasting them could not be easier for a really satisfying result.

Here's what you'll need

  • 3 whole fennel bulbs
  • 3 tbsp olive oil
  • 1 tbsp honey
  • salt and pepper to taste
  1. cut the fennel bulbs lengthwise and cut into wedges, keeping the centre attached so they don't come apart

  2. drizzle with honey, olive oil and season well

  3. toss into a 350° oven for 30 minutes or until they're starting to caramalize
