Roasted Radishes


I've grown up looking at radishes as simply something that goes onto a very retro (or dated) salad and that was all they were good for. I then started to wonder what else i could use them for. I mean, they're cheap, really nice and spicy and fresh tasting. Then, I figured, why not roast them? I treated them as you would a potato of that size and it worked really well! Tasty and sweet...give them a go as part of any roast veg you have alongside your meat.

Here's what you'll need

  • ½ pound radish (or as much or little as you like...just remember to do at least 4 or 5 per person depending what else you serve with it)
  • 2 tsp olive oil
  • 1 tsp butter
  • ½ lemon (juice and zest)
  • salt and pepper
  1. leave whole or cut the radishes in half if you like

  2. toss in olive oil and butter and season well with salt and pepper

  3. toss onto a baking sheet and pop into a preheated 350° oven for about 20 minutes

  5. that's it...they're done when they're soft and have nice colour to them (like any roasted veg)
