ROASTING PEPPERS

I absolutely adore roasted red peppers! They add an amazing punch of flavour to anything from sandwiches, pizza, pastas or sauces! They elevate any dish with an unmistakeable sweetness that would make anyone happy. Use them as you would tomatoes or garlic...easy too!

Here's what you'll need

  • 8 red peppers (or any peppers you like)
  • 2 tbsp olive oil
  • salt and pepper to taste
  1. wash and dry the peppers really well

  2. cut them in half and scoop out the innards and seeds

  3. toss them in olive oil and season with salt and pepper

  4. place them cut side down on a foil lined baking sheet

  5. ROASTING PEPPERS

  6. toss into a 425° oven for about 15 minutes or until nicely charred
  7. ROASTING PEPPERS
  8. toss them into a bowl and cover tightly with cling film until cooled

  9. carefully peel as much of the charred skin from them as possible, but no need to make them absolutely perfect...and DO NOT rinse them under water

  10. ROASTING PEPPERS
  11. now they're ready, and make sure to save some of the liquid left in the bowl to add to anything you cook
