CREAM OF POTATO & CARAWAY SOUP TOPPED WITH BRAISED RED CABBAGE & PECANS

It's cold and blistery outside...time to make soup. This is a really great fall dish. I always top my soups with complimentary ingredients to give extra taste and texture. Make this on your next fall or winter Sunday afternoon indoors. You'll have them licking the bowl and begging for more. It also makes a really elegant first course for a dinner party (and you can make it all a day ahead). You can make it smooth for an elegant dinner or rustically chunky.

Here's what you'll need

CREAM OF POTATO & CARAWAY SOUP TOPPED WITH BRAISED RED CABBAGE & PECANS
  • 4 russet baking potatoes (peeled and cubed)
  • 1 medium onion (finely chopped)
  • 2 cloves finely chopped garlic
  • 4 slices bacon
  • 2 tbsp butter
  • 4 cups chicken stock
  • ¼ cup cream
  • 3 tbsp caraway seeds
  • 1 leek (cleaned and sliced thinly)
  • ½ head or red cabbage
  • 3 tbsp sugar
  • 2 tbsp red wine vinegar
  • ¼ cup white wine
  • ½ cup pecans
  • salt and pepper to taste

    THE SOUP

  1. in a big pot, brown the bacon, leeks and onions

  2. add caraway seeds and sautee for a few minutes, until franfrant

  3. add cubed potatoes and chicken stock

  4. simmer for 20 ~ 25 minutes or until potatoes are completely cooked and falling apart slightly

  5. puree everything in a blender, use an immersion blender or you can even just use a potato masher, mash the whole lot until it's as smooth as you want and finish it off with a dash of cream to thicken it up

  6. make sure you taste it to make sure it's season well

    THE TOPPING

  8. sautee onions and thinly sliced red cabbage

  9. add vinegar, sugar, pecans, white wine and enough water to just cover

  10. season well and simmer partially covered for 20 minutes or until cabbage is soft and cooked through

  11. top your soup and dig in
