I love soup! I can live off the stuff. Whether it's a hearty winter warmer or a light summer broth, soup is perfect for any occasion. Every country in the world has their version of it, so you can really vary the flavours, textures and colours of your soups. Different vegetables, meats, herbs and spices give you a different soup every time.

Comfort dishes are always in fashion and this dish is no exception! Hearty, creamy and, of course meaty. The secret to nice meatballs, soft and tender is to simmer them for a good long time. Most people just cook them and serve, but believe me when I say that time is the best method. Give it a go!
THAI GREEN CURRY
I've always wanted to learn how to cook with Thai spices and this is the perfect entry level dish to try! You can find all these ingredients in any Asian shop or even in most supermarkets these days. The flavours are so good and absolutely addictive! It's fresh and green, tangy with a bit of spice that will heat up any cold night.
STEWED MOROCCAN BEEF
For whatever reason, I have always been drawn to Moroccan spices and that flavour profile. I'm French-Canadian and have no connection to that part of the world as far as I'm aware, but I just love it! Cumin, cinammon, pine nuts, couscous...all right up my alley. This is one of my favourite things to cook and eat. Slow cooked, melt in the mouth beef, serve up with fresh cilantro, toasted pita chips and tzatziki...yum!
CLASSIC BEEF & MUSHROOM STEW
Nothing is more comforting than a rich, aromatic beef stew. There is something about the combination of red wine, beef, rosemary that is absolutely craveable! To get the best result, you must brown the meat first. This may seem like a simple step, but a bit tedious. If you take the time to this step right, the rest just takes care of itself and you'll end up with a robust, flavourful stew.
CREAM OF POTATO & CARAWAY SOUP TOPPED WITH BRAISED RED CABBAGE & PECANS
Cold and blistery out? Make soup! I top my soups with complimentary ingredients to give extra taste and texture. Make this and they'll be licking the bowl and begging for more. It also makes a really elegant first course for a dinner party (make it a day ahead). Make it smooth for an elegant dinner or chunky to be more rustic.
Beer lovers are not hard to please in general. These people love nothing more than a cold beer on a hot day. Who wouldn't get along with someone like that? If you want to impress this generally easy-going breed, you should start by cooking everything in their favorite libation....BEER! This chilli is sure to please.
