EGG CROSTINI WITH GREEN PUREE, SALMON AND MINTY BECHEMEL SAUCE

The secret to this dish is the crunchy bread underneath. Be sure to toast it well as all the other textures are soft and mushy, so you'll need to that crunch. The mint goes really well, so I wouldn't leave it out. Give this a try the next time your mother-in-law comes over or you have to host a small brunch. Serve it up with a simply dressed salad and you're good to go!

Here's what you'll need

  • 4 salmon fillets (de-boned and skinned)
  • 4 eggs
  • 4 thick bread slices
  • 2 cloves minced garlic
  • 1 small onion
  • 2 tbsp flour
  • 2 tbsp butter
  • 1 cup milk
  • 1 tbsp olive oil
  • ¼ cup cooked peas
  • ¼ cup cooked asparagus
  • ¼ cup cooked green beans
  • ½ cup ricotta (or goat's cheese)
  • ½ cup grated parmesan
  • salt and pepper to taste
  1. toss the asparagus, green beans and peas into a food processor with the ricotta and parm and blitz until it's a smooth puree

  2. sautee onions and garlic in butter until translucent

  3. add the flour, stir and cook about 4 minutes

  4. add the milk and whisk over medium heat until the sauce starts to thicken

  5. season your salmon well with salt and pepper and sear gently over medium heat on all sides in olive oil

  6. set aside to rest a minute or two

  8. meanwhile you can poach your eggs in water with vinegar (not boiling)

  9. brush olive oil on the bread slices and bake a few minutes in the oven until toasty and crunchy

  10. smear the bread with the green puree

  11. gently break up your salmon into nice big chunks

  13. scoop out your eggs and place onto the puree

  14. at the last minute, toss your finely chopped mint into the sauce and pour over the egg crostinis

  16. serve with some nice orange juice and strong coffee, or Mimosas, or caesars or bloddy maries...or whatever you like to drink at brunch
