I don't have the biggest sweet tooth, but there is nothing better to end a good meal, or enjoy with coffee in the afternoon than something sweet. Enjoy life and indulge once in a while!

SALTED BUTTERSCOTCH & MARSCAPONE CREAM PAVLOVA
Some say there are two kinds of people in the world: chocolate and caramel. While I do enjoy a nice peice of chocolate, I am absolutely the latter! This is my favourite desert, creamy, sweet, with just a hint of saltiness and the gooey, yet crunchy meringue. Just leave me with the whole thing and a spoon, no shame!
Chocolate brownies are probably the quintessential childhood favourite...served up warm with ice cream and a cold glass of milk! And a good brownie, I mean a really good brownie is gooey and moist on the inside, crispy and crunchy on top and just heavenly!
BASIC SPONGE RECIPE
There is always a call for a simple sponge recipe in your arsenal. Add any flavourings you like, even herbs, chocolate chips, nuts, lemon, fruit, use food colouring to jazz it up, ice it, fill it...really, the possibilities are endless!
WHITE CHOCOLATE BROWNIE & SALTED CARAMEL TOPPING
Who doesn't LOVE brownies? A nice balance of chewy, gooey and a bit crispy, all mixed in with chocolate. This version uses white chocolate and it really works!
DOUBLE BAKED CHOCOLATE SOUFFLÉ
I had never had a soufflé before much less had ever made one! I'd heard of horror stories of how difficult it is, could easily be ruined and not something for an amateur cook to ever attempt, but I was determined to give it a go and I was not dissappointed. It was amazingly rich and light at the same time. If you are a chocolate lover, this dish will deliver in spades and sprinkle with some flaked sea salt and it is devine! Give it a try!!
CHEESY LEMON CREAM PASTRIES
I recently made a lovely lemon puree that I served with scallops and had a fair amount left over. I decided to make cheesecake type pastries and they were amazing. I completely made this up on the fly, so you will likely have some filling left because I did. If you like lemon and creamy cheeses like I do, you will love this!
BANANA WALNUT BREAD
This was my first attempt at making banana bread and I found to be insanely easy! Why had I thrown away so many bad bananas when I could have have made a nice loaf of banana bread?! It took less than 10 minutes to make, not including the baking time of course. Foolproof comfort food...just slather with generous globs of butter!
CHICKEN 'N' WAFFLES WITH WHISKEY CREAM SAUCE
I know this is not a typical "sweets" but thought I had to put it here. I bought a waffle iron a while back and was excited to try it out and I knew exactly what I was going to make first...chicken and waffles! And this sauce is the perfect thing to go with it. You get everything! Crunchy chicken, crispy soft waffles, sweet, salty, spicy...ticks all the boxes!! Give this a try! You will not be disappointed, guaranteed!
CHOCOLATE CHIP COOKIE CREAM SANDWICHES
Mishaps happen all the time in the kitchen and that's how this recipe came to be. I was trying to make whipped cream, over whipped it and essentially made butter. After running out for more cream and remaking the whipped cream, I was left with this sweetened butter. I then realized that I'd accidentally made butter icing! A batch of cookies soon came after.
GOOEY CHOCOLATE CHIP COOKIES
There are certain foods that you could consider to be comfort foods and these are different to different people. My list would have sheppard's pie, spaghetti and tomato sauce, grilled cheese and of course the almighty chocolate chip cookie. These are everything you want in a cookie, cripy on the edges and soft and gooey in the centre. Dunk into a glass of milk and you're a kid again!
HOMEMADE DOUGHNUTS WITH SPICY CHOCOLATE DIPPING SAUCE
Making homemade doughnuts is easy and really satisfying. They are just amazing straight out of the deep fryer and dipped into a warm chocolate sauce with just a hint of cayenne to give it a tiny kick. Perfect for sitting around the kitchen on a Sunday morning with coffee.
BLUEBERRY RICOTTA PHYLLO ROLL WITH THYME HONEY AND ROASTED WALNUTS
I really love ricotta! It is so versatile and can be used in both sweet and savoury ways. The creme fraiche really works well with and adds a creaminess that you will love. This is a really nice dessert that is virtually foolproof and can be made well in advance and heated up when you need it.
MISS SUE'S ZUCCINI BREAD
In the summer, there is so much zucchini (especially if you grow it in your garden) that I'm always looking for new ways to use it. In this version, I've left out the raisins...I would send every single raisin in the world to a bottomless pit, but some people like them. So, if you like raisins, you can add them, if not, just double up the walnuts.
I will never claim to be a baker...I cook! Who needs to follow a recipe to the letter only to have it fail miserably? Who needs that? Trust me when I say that this is much, much easier to make than you think. We made these one day and were completely blown away by how professional looking they turned out...and the smell!!
This the easiest dessert to make on the planet and absolutely fool proof! No need to bake, no fancy gadgets or equipment, no skill required at all. Just three ingredients, a pot. The only hard part is waiting for it set before you can dig in.

CHOCOLATE LAVA CAKE
I always hear people say that this is a difficult dessert to make, but nothing is further from the truth. It is so easy and simple. I'd recommend making the batter and pour it into the ramekins ahead of time, then all you have to do is pop them in the oven, set a timer and done. They must be served warm, so don't cook them until you're ready.
