BANANA WALNUT BREAD

This was my first attempt at making banana bread and I found to be insanely easy! Why had I thrown away so many bad bananas when I could have have made a nice loaf of banana bread?! It took less than 10 minutes to make, not including the baking time of course. Foolproof comfort food...just slather with generous globs of butter!

Here's what you'll need

  • 2 cups flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • ½ cup butter
  • ¾ cup brown sugar
  • 2 eggs (beaten)
  • 2½ cups bananas (overripe and mashed)
  • ¼ cup walnuts

Here's how

  1. in a bowl, mix the flour, baking soda and salt

  2. in another bowl, cream the butter and brown sugar until smooth

  3. add the bananas and eggs and mix well

  4. toss in the walnuts

  6. pour into a greased bread tin

  8. toss into a preheated 350° oven for an hour or until a toothpick comes away clean when you poke it in the centre

  10. let it cool 10 or 15 minutes and pop it out of the tin onto a cooling rack to cool

  11. once it's cooled a bit, slice nice thick slabs and slather with lots of butter!
