CHOCOLATE BROWNIE

Chocolate brownies are probably the quintessential childhood favourite...served up warm with ice cream and a cold glass of milk! And a good brownie, I mean a really good brownie is gooey and moist on the inside, crispy and crunchy on top and just heavenly!

Here's what you'll need

Brownies

  • 4 oz dark chocolate (70%)
  • 2 oz semi-sweet chocolate
  • ½ cup butter (1 stick)
  • 1 tsp instant coffee
  • ½ cup sugar
  • ½ cup light brown sugar
  • 2 whole large eggs and 1 egg yolk
  • ½ cup flour
  • 1 tbsp cocoa powder
  • 1 teaspoon vanilla extract
  • 1 pinch of sea salt
  • ½ cup chocolate chips

Here's how

  1. preheat your oven to 350° and grease an 8-inch baking pan

  2. break up your choclolates into chunks

  3. CHOCOLATE BROWNIE

  4. using a bowl over a steaming water (or a double boiler), melt the chocolate, butter and instant coffee until completely incorporated

  5. whisk in the sugars and heat until dissolved

  6. take off the heat and let the mix cool to room temperature, then whisk in the eggs, fold in the cocoa powder, flour, salt, vanilla extract and finally the chocolate chips

  7. CHOCOLATE BROWNIE

  8. pour the mix into the greased pan, toss into the oven for about 30 minutes or until a toothpick comes out clean when you stick it in

  9. let it cool completely in the pan, then cut it up into whatever size or shape you want and serve it up!
