GOOEY CHOCOLATE CHIP COOKIES

There are certain foods that you could consider to be comfort foods and these are different to different people. My list would have sheppard's pie, spaghetti and tomato sauce, grilled cheese and of course the almighty chocolate chip cookie. These are everything you want in a cookie, cripy on the edges and soft and gooey in the centre. Dunk into a glass of milk and you're a kid again!

Here's what you'll need

  • 3 cup plain flour
  • 2 eggs
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 tsp vanilla
  • ½ tsp salt
  • 250g butter (room temp or soft)
  • 1 tsp baking soda
  • 2 tsp hot water
  • 1 bar baking chocolate (70% cacao or more)

Now, let's put it together

  1. in a bowl, beat the butter with the white and brown sugar until smooth

  2. beat in the eggs one at a time

  3. fold in the vanilla and salt

  4. in a separate bowl, mix the hot water and baking soda and give a little stir with your finger until it dissolves and stir that into the batter

  5. with the chocolate still in the package, give it a good bash with whatever you have (I used a rolling pin) until nice and broken

  6. mix the chocolate into the batter

  8. scoop out a spoonful of the batter onto a baking sheet making sure you leave enough space in between each one (don't overcrowd them as they'll grow into each other)

  10. bake in a preheated °350 oven for 10 minutes

  11. don't cook much longer than this...they will seem undercooked from the top and quite soft, but this is fine, just let them rest on the pan for a few minutes and then use a spatula to carefully lift them onto a cooling rack
