CHOCOLATE LAVA CAKE

I always hear people say that this is a difficult dessert to make, but nothing is further from the truth. It is so easy and simple. I'd recommend making the batter and pour it into the ramekins ahead of time, then all you have to do is pop them in the oven, set a timer and done. They must be served warm, so don't cook them until you're ready.

Here's what you'll need

  • 1 stick butter
  • 4oz unsweetened chocolate
  • 2 eggs
  • 2 egg yolks
  • 2 tbsp flour
  • 2 cups milk
  • ½ cup sugar
  • 1 cup whipping cream
  1. grease, flour and sugar 4 ramekins

  2. melt chocolate in a double boiler, melt the chocolate and butter together

  3. in a bowl, whisk eggs, yolks and half the sugar until frothy and light

  4. add the chocolate (but wait until it cools a bit, you don't want to scramble the eggs)

  5. pour into the molds

  6. bake in a 450° oven for 6 or 7 minutes (set a timer!!)

  7. meanwhile, in another bowl whisk the whipping cream and rest of the sugar until it's quite stiff

  8. invert the ramekins onto a clean dish towel and they should release easily

  9. serve warm with whipped cream
