Double Baked Chocolate Soufflé


I had never had a soufflé before much less had ever made one! I'd heard of horror stories of how difficult it is, could easily be ruined and not something for an amateur cook to ever attempt, but I was determined to give it a go and I was not dissappointed. It was amazingly rich and light at the same time. If you are a chocolate lover, this dish will deliver in spades and sprinkle with some flaked sea salt and it is devine! Give it a try!!

Here's what you'll need

  • 40 grams butter
  • 3 tbsp flour
  • 2 tbsp cocao powder
  • 300ml milk
  • 1/3 cup sugar
  • 120 grams dark chocolate
  • 4 eggs (seperated)
  • 1 tbps vanilla extract
  • 1 tsp salt (plus more to sprinkle over the top)

Here's how

  1. preaheat a 350° oven and boil a kettle of water

  2. in a double boiler, melt the butter with the flour and cocao powder

  3. add the milk and sugar and whisk until slightly thickens

  4. break up the chocolate into pieces and toss into the mix and whisk in until melted and smooth

  6. remove from the heat and whisk in the egg yolks

  7. in another bowl, whisk the egg whites with the salt until it form stiff peaks

  8. fold in the egg whites a bit at a time until all incorporated

  9. pour the mixture into ramekins and place them in a roasting pan

  11. put the pan in the oven and pour in boiling water until about halfway up the sides of the ramekins

  13. bake for 17 to 20 minutes or until risen and cracking on the top

  14. leave to cool at room temperature for an hour or so, then run a knife along the outside of the soufflé to loosen it from the ramekin and tip out onto a plate

  15. when you're ready to serve it up just warm it up in the oven for a few minutes or even the microwave for 30 seconds or so

  16. sprinkle lightly with flaked sea salt and serve warm with a dollop of ice cream or whipped cream to give you a nice hot and cold sensation which is amazing
