White Chocolate Brownie, Salted Caramel Sauce & Vanilla Whipped Cream

WHITE CHOCOLATE BROWNIE, SALTED CARAMEL SAUCE & VANILLA WHIPPED CREAM

Who doesn't LOVE brownies? A nice balance of chewy, gooey and a bit crispy, all mixed in with chocolate. This version uses white chocolate and it really works! Toss in salted caramel and sweet vanilla flavoured whipped cream and it is a masterpiece of decadence!

Here's what you'll need

Brownies

  • 10 oz white chocolate (made with cocoa butter)
  • 85 grams unsalted butter
  • ½ cup of sugar
  • ¼ tsp salt
  • 2 eggs
  • 1 cup all purpose flour
  • ¼ cup almond slivers

Salted Caramel Sauce

  • 1 cup (200g) granulated sugar
  • 90g salted butter (cut into pieces)
  • ½ cup heavy cream
  • 1 tsp sea salt

Vanilla Whipped Cream

  • 1 cup heave cream
  • 1 tbsp icing sugar
  • 2 tbsp vanilla extract

Here's how

  1. preheat your oven to 350° and grease an 8-inch baking pan

  2. cut up the white chocolate and butter and pop into a double boiler until melted and smooth

  4. whisk in the sugar and salt

  6. toss in the almonds and whisk

  8. whisk in the eggs (one at a time)

  10. add the flour

  12. mix well until just incorporated

  14. pour the batter into the greased pan

  16. now for the caramel sauce, heat the sugar over medium heat, stirring constantly until melted and an amber colour, but be careful not to burn it

  17. then add the butter, and be careful because it'll bubble up fairly aggressively, keep stirring a few minutes

  18. then slowly drizzle in the cream, and it'll bubble again

  19. pour half the sauce onto the brownie batter

  21. toss the pan into the oven and bake for 25 to 30 minutes

  22. when it's ready, allow it to cool before you cut into it

  24. in a bowl, whisk the cream, vanilla and sugar until it forms stiff peaks

  25. toss a warm square of brownie, top with whipped cream and caramel sauce and sprinkle on slivered almonds
