WHITE CHOCOLATE BROWNIE & SALTED CARAMEL TOPPING

Who doesn't LOVE brownies? A nice balance of chewy, gooey and a bit crispy, all mixed in with chocolate. This version uses white chocolate and it really works!

Here's what you'll need

Brownies

  • 10 oz white chocolate (made with cocoa butter)
  • 85 grams unsalted butter
  • ½ cup of sugar
  • ¼ tsp salt
  • 2 eggs
  • 1 cup all purpose flour
  • ¼ cup almond slivers

Salted Caramel Topping

  • 1 cup (200g) granulated sugar
  • 90g salted butter (cut into pieces)
  • ½ cup heavy cream
  • 1 tsp sea salt

Here's how

  1. preheat your oven to 350° and grease an 8-inch baking pan

  2. cut up the white chocolate and butter and pop into a double boiler until melted and smooth

  4. whisk in the sugar and salt

  6. toss in the almonds and whisk

  8. whisk in the eggs (one at a time)

  10. add the flour

  12. mix well until just incorporated

  14. pour the batter into the greased pan

  16. now for the caramel sauce, heat the sugar over medium heat, stirring constantly until melted and an amber colour, but be careful not to burn it

  17. then add the butter, and be careful because it'll bubble up fairly aggressively, keep stirring a few minutes

  18. then slowly drizzle in the cream, and it'll bubble again

  19. it's ready when it's thick and creamy

  21. pour it onto the brownie batter

  23. toss the pan into the oven and bake for 25 to 30 minutes

  24. when it's ready, allow it to cool before you cut into it

  26. ta da...serve it up warm with some cold ice cream and some of the leftover caramel sauce (if you have any)
