You need to eat



Trying to a bit healthier for our bodies and for the environment too, we decided to be vegetarian for 2 days a week. Coming up with recipes that aren't covered with cheese or cream was going to be the biggest hurdle to over come. Well, this works perfectly! Creamy and smooth, just perfect with nice salty pecorino (or you can use parmesan, but then it's not vegetarian). So easy and fast...and serves 2 easily.

Here's what you'll need

  • 2 ripe avocados
  • 2 cloves garlic
  • 1 handful fresh basil
  • pecorino (as much or as little as you like)
  • 2 tbsp sundried tomatoes (chopped)
  • 2 tbsp olive oil
  • salt and pepper to taste

  1. toss the avocado (peeled, of course), garlic, basil, olive oil and pecorino into a food processor and whiz it all up until smooth


  3. add the sundried tomatoes

  4. boil up your pasta as per directed on the package

  5. strain, but keep some of that pasta water and toss the noodles back into the pot

  6. add the avocado puree and toss well, adding some of the pasta water a teaspoon at a time to loosen and thicken up the sauce

  7. garnish with fresh basil and grates of cheese
