BLUE CHEESE & FIG TART

I had never tried a fig until this year. As usual, I saw in the grocery store and bought a few. I instantly cut one open when I got home to give it a try. The best way I think to describe them is raspberry jam in a soft rind. Sweet, a bit tart with a graininess that is one of my favourite things about raspberries and now, figs! They work well with sweet or savoury dish, or a combo of the two.

Here's what you'll need

  • 6 figs (sliced)
  • 1 package rolled out puff pastry
  • 6 tbsp cream cheese
  • 1 egg (beaten with a splash of milk to glaze)
  • ½ cup blue cheese (crumbled)
  • ¼ cup pine nuts (lightly toasted)
  • balsamic glaze to drizzle (I used a shop-bought glaze, but you can make your own reduction if you like)
  • salt and pepper
  1. cut the puff pastry sheet into thirds

  2. lightly score a border around the edge, careful not to cut all the way through

  3. prick the inside of the border with a fork

  5. smear cream cheese inside the border

  7. lay on the figs and sprinkle on the blue cheese

  9. bake immediately in a preheated 350° oven for about 20 minutes, or until the edges have risen up and the cheese is bubbly and the figs are dark and caramelized

  10. drizzle on the balsamic glaze, sprinkle on the pine nuts and serve up with a green salad for a light lunch or starter
